Kernel: T8868: Enable crash dump (kdump) and debug info in config
Enabling the following options allows us to use `kdump-tools`:
- `CONFIG_CRASH_DUMP`
- `CONFIG_DEBUG_INFO`
- `CONFIG_PROC_VMCORE`
